Vegetarian, really hearty and with a crunchy Jalapeno cheese crust these juicy cauliflower steaks come out of the oven. And the big hit: Each of the large, luscious cauliflower steaks brings just 300 calories on the scales. Great for fat logic friends, but also for all others with good nutritional intentions. YAY!
Three tasteful brownies spice up the cauliflower for a tasty treat: aromatic Gruyere (or mountain cheese), spicy jalapenos (fast homemade after this simple recipe) and crunchy panko * (Japanese Breadcrumbs) are the secret behind the irresistible, crunchy cheese crust. Peppers, spinach and parsley provide colorful freshness as a counterweight to the cheese.
You can hardly ask for more from your lunch, can you? The man with fears (cauliflower steaks ...?!?! Really now ?!) incidentally was presented twice with his plate. And then dropped a few non-binding comments that you could eat it again very soon. Running.

All you need is a functioning oven, a slightly larger knife and a sharp grater (I have been using these indestructible things for years *) - and it can be cosily crunched. What do you say? Here comes the low carb recipe for cauliflower steaks with crunchy Jalapeno cheese crust
1 large head cauliflower
4 tsp olive oil
125 g of Gruyere or mountain cheese, finely grated
2-3 tablespoons of pickled spicy jalapenos, chopped
(from this simple recipe or ready from the supermarket)
30 g panko * (not normal breadcrumbs)
1 handful of fresh spinach, chopped
1/2 bunch of smooth parsley, chopped
1/2 teaspoon lemon sifting salt & pepper
1 red pepper, finely diced

Preheat the oven to 220 degrees top/bottom heat. Cover a baking tray with parchment paper and heat in the oven.
Cut off the stem of the cauliflower so that the head stands on a board without wobbling. Cut off two opposite sides of cauliflower and finely chop. Cut the remaining cauliflower into four 3 cm steaks with a large knife.
Rub the cauliflower steaks thinly with olive oil on both sides and place them on the hot plate without any overlapping. Bake at 220 degrees for 20 minutes.
In the meantime, mix the chopped cauliflower with 100 g of cheese, chopped jalapenos, panko or breadcrumbs, spinach, lemon zest and 2/3 of the parsley.
Bring the oven down to 200 degrees.
Remove the plate from the oven, spread the cheese mass with the spoon liberally on the cauliflower steaks and press lightly. Bake in the oven at 200 degrees for another 18-20 minutes, until the cheese crust is melted and lightly browned.
The cauliflower steaks with as wide a spatula or a pans knife (eg this *) from the plate do not take them disintegrated. Before serving, sprinkle with the remaining cheese, parsley and the diced peppers and season with pepper.(And those who want to stay below 500 calories per meal as a fat logistical friend are still in the game.)
